Less of a recipe, more of a trick to make a butter that's really special for serving. We used fresh sage and lemon zest, but it's really up to you.
Block of organic butter
Zest of 1 lemon
Small handful of fresh sage leaves (dried works too)
Generous sprinkle of black pepper
Place the butter (must be at room temperate) in a large mixing bowl.
Whisk together well using a hand held or electric whisk.
Throw in your lemon zest and chopped sage leaves (save some for the topping) and whisk again.
Plate up and top with salt, pepper and sage leaves to garnish.
Enjoy with a slice of freshly baked bread.
